General Guidelines For The Best Tasting Roasts

1. Bring roasts to room temperature before cooking
2. Preheat oven to 350°F
3. Take out of seal and pan fry
4. Rub with olive oil
5. Season wiith coarse kosher sea salt and freshly ground pepper

Desired Doneness Options*:
Rare=15-16 minutes per pound; internal temperature 125°F

Medium Rare=16-17 minutes per pound; internal temperate 130-135°F

Medium=18 minutes per pound; internal temperature 140°F

Medium Well=19 minutes per pound; internal temperature 150°F

Well Done=20 minutes per pond; internal temperature 160°F

*times and doneness will vary with different ovens 

Other Tips;
*We recommend against poking the roast too much or too soon while cooking as this causes some drainage of the natural juices causing a drier roast

*Wait until you are within 20-30 minutes of your estimated cook times before inserting a thermometer the first time

*Insert the thermometer in the thickest part of the roast but away from the bone if you are roasting with a bone-in roast

*Allowroast to rest for 15-20 minutes after removing from the oven before slicing. This allows the juices to seep into the full roast making a more flavorful, juicy roast
